The FDA Food Code requires that the person in charge of a foodservice operation become a Certified Food Protection Manager. The person in charge must be onsite at all times during operating hours if the regulatory authority has determined that the operation serves and prepares TCS (Time/Temperature Control for Safety) food. A Certified Food Protection Manager must show that he or she has the required knowledge by taking a course and passing a test (70% or better) from an ANSI (American National Standards Institute) accredited program, such as the ServSafe Manager Course, and passing the ServSafe Food Protection Manager Certification Examination.


The certification is valid for five years, and recertification is required. There will be mini breaks provided and a 30-minute lunch break. Bring a valid Photo ID, notebook to take notes (recommended), and no. 2 pencils.  All classes are from 8 am until 5 pm. Arrive promptly by 8:00 am. Students will take the exam on the same day as the class.

El Código de Alimentos de la FDA exige que la persona a cargo de un servicio de alimentos se certifique como Gerente Certificado de Protección de Alimentos. Si la autoridad reguladora ha determinado que el servicio sirve y prepara alimentos con Control de Tiempo y Temperatura para la Seguridad (TCS), el responsable debe estar presente en todo momento durante el horario de atención. Un Gerente Certificado de Protección de Alimentos debe demostrar que posee los conocimientos necesarios realizando un curso y pasándo un examen (con una puntuación mínima del 70%) de un programa acreditado por el ANSI (Instituto Nacional Americano de Normas), como el Curso de Gerente ServSafe, y pasando el Examen de Certificación de Gerente de Protección de Alimentos ServSafe.


La certificación tiene una validez de cinco años y se requiere recertificación. Se ofrecerán breves descansos y una pausa de 30 minutos para almorzar.


Traiga una identificación con foto válida, un cuaderno para tomar notas (recomendado) y dos lápices. Todas las clases son de 8:00 a. m. a 5:00 p. m. Llegue puntualmente a las 8:00 a. m. Los estudiantes presentarán el examen el mismo día de la clase.
